Award-Winning Sanctuary Pastry Chef
Kiawah Island Golf Resort now boasts an award-winning Sanctuary pastry chef. This probably comes as no surprise if you’ve had the good fortune to visit The Sanctuary over the holidays and marvel at the massive chocolate sculptures prominently displayed in the lobby every year from Thanksgiving weekend through New Year’s. Each year’s sculpture that bears a different theme is the brainchild of Executive Pastry Chef Jordan Snider, who conceptualizes and designs each sculpture, then leads the pastry team in executing each year’s design composed entirely of chocolate.
Now Chef Snider, along with the other two members of Team USA, brought home the silver medal from a superregional pastry competition held in Santiago Chile. There they competed against other national teams from throughout the Americas. The team’s second place finish secured them advancement to the main event, the Coupe du Monde de la Pâtisserie to be held in January 2023 in Lyon France. Referred to as the Olympics of the pastry world, the competition will pit the top teams from Africa, the Americas, Asia, Europe and the Middle East.
For the competition, the team was required to produce three tasting and two artistic creations (one sugar and one chocolate centerpiece), as well as a buffet display integrating their creations and reflecting their chosen theme. Although Chef Snider’s creative passion has always involved chocolate, for the competition he was responsible for the sugar portion of the creative piece, which was an interpretation of a casino theme, complete with rolling dice.
