PBS Food’s “Original Fare” Presents Chef Banta

About 2 months ago, Kelly Cox and her crew from PBS Food’s new video food series, Original Fare, took their culinary adventures to Kiawah Island, SC and joined us here at the Resort for a little taste of the Lowcountry.  Original Fare – Uncovering the Origins of Our Food, One Destination at a Time, is a collection of videos, food stories, recipes, “how-to’s”, blogs and travel destinations.  Airing this past week, our very own Chef de Cuisine Jonathan Banta of The Atlantic Room at The Ocean Course taught Kelly “How To Elevate Your Fresh Catch”. 


Kelly Cox is part of the foodie movement, meeting chefs, hunters, moonshiners, etc. from all across the country.  Her adventures have given her the opportunity to create a travel video series for eating, drinking, and discovering local craft fare.  Kelly is the host/storyteller in the series; she met with Chef Banta and learned that the Lowcountry is full of fresh seafood options.  During the episode, Banta explains how to elevate your fresh catch with a leek fondue.  The fresh catch happened to be a local redfish from a farm about 30 miles south of Kiawah Island and the leeks were grown on our neighboring, Wadmalaw Island.  As Chef prepared the redfish with mild seasonings of salt, pepper and extra virgin olive oil, Kelly asked him what was so appealing about the south… The south has all of these different cultures that have come together and mixed their ingredients.  This dish in particular has a lot of French influence.  It is also showcasing produce that’s growing in our region this time of year and how well it works together.  The leeks from Wadmalaw and the local shitake mushrooms from Johns Island complement each other.  While pairing these with potatoes and arugula salad this sea to table fare is complete.  Stop by The Atlantic Room at The Ocean Course Clubhouse and enjoy one of Chef’s culinary creations for yourself!
